Keropok Lekor (鱼饼/鱼条) is a traditional Malay snack originating from the East Coast of Peninsular Malaysia, specifically Terengganu. It is a protein-packed delicacy made from fish and sago flour. 

1. History and Origin (历史与起源)

  • The Fisherman’s Innovation: It originated in the fishing villages of Terengganu. In the past, fishermen had a massive surplus of fish during peak seasons. To prevent waste, they developed a way to preserve fish by mixing minced meat with sago flour and salt.
  • The Name: The word "Lekor" is believed to be derived from the Terengganu Malay dialect word for "lingkar" (circle/coil), referring to the way the dough is rolled into long, cylindrical log shapes before boiling.
  • 渔民的智慧: 起源于丁加奴(Terengganu)的渔村。早期渔民在丰收季节面临鲜鱼过剩的问题,为了不浪费食材,他们将鱼肉剁碎,混入西米粉(sago flour)和盐,制成可以保存的零食。
  • 名称由来: “Lekor”被认为源自丁加奴方言中的“Lingkar”,意为“圆圈”或“卷曲”,形容鱼饼在煮熟前被搓成条状或卷状的造型。 

2. Explanation and Preparation (解析与做法)

  • Ingredients: The best Keropok Lekor uses a high ratio of fish (usually Ikan Selayang or Ikan Kembung) to flour. This gives it a greyish tint and a strong, savory umami flavor.
  • Three Main Varieties:
  • The Soul Mate: It is incomplete without Sos Cili Terengganu, a special sweet and spicy chili sauce made with vinegar and sugar.
  • 核心构成: 优质的鱼饼使用高比例的鲜鱼肉(如圆鲹或鲭鱼)与面粉混合。这赋予了它天然的灰白色泽和浓郁的鲜味。

3. Cultural Significance (文化意义)While it remains the "Soul Food" of Terengganu, it has become a beloved national snack across Malaysia. In Penang, you can find it at many Pasar Malams (night markets) and street corners, often sold alongside fried bananas (Pisang Goreng).
