Bubble Waffle (known as Gai Daan Zai / 鸡蛋仔) is Hong Kong's most iconic street snack, famous for its unique "bubble" shape and its perfect balance of crispy and chewy textures. 

1. History and Origin (历史与起源)

  • Post-War Resourcefulness: It emerged in Hong Kong during the 1950s. At that time, many grocers had broken or cracked eggs that couldn't be sold to customers.
  • The Invention: To avoid waste, street vendors mixed these broken eggs with flour, evaporated milk, and sugar to create a batter. They poured it into two grooved iron plates to bake over charcoal.
  • The Shape: Legend says the egg-shaped moulds were designed to give the illusion that the customer was eating many mini-eggs, making the snack feel more substantial during a time of economic recovery.
  • 战后智慧: 鸡蛋仔起源于1950年代的香港。当时杂货店里常有破裂或受损而无法售卖的鸡蛋。
  • 发明过程: 为了不浪费食材,街头小贩将这些破蛋与面粉、淡奶和糖混合成面糊,倒入特制的蜂巢状铁模中,用炭火烘烤。

  • The Name: In Cantonese, "Gai Daan Zai" literally translates to "Little Chicken Eggs."
  • Texture Contrast: A perfect bubble waffle is a "dual-texture" experience. The "bubbles" should be crispy on the outside but hollow and soft on the inside.
  • Modern Evolution: While the original flavor is plain egg, modern versions include chocolate, matcha, or charcoal cheese. Some are served as "waffle cones" filled with ice cream and toppings.
  • 含义: 粤语称为“鸡蛋仔”,字面意思就是“小小的鸡蛋”。
  • 口感对比: 完美的鸡蛋仔讲究“外脆内软”。每一个“泡泡”外皮应当酥脆,内部则是半空心且带有Q弹的口感。
  • 现代演变: 除了原味,现在还有巧克力、抹茶或黑炭芝士等口味,甚至被卷成卷筒,里面塞满冰淇淋和配料。
